Appalachian Jerk Chicken

 

What You’ll Need

  • 2 pounds of chicken thighs/drums

  • 3-4 TBSP of Appalachian Jerk seasoning

  • A few green onions (chopped)

  • Fresh ginger (paste works fine as well)

  • 2-4 habaneros depending on your spice tolerance

  • A cup of lime juice

  • A half cup of soy sauce

  • A half cup of olive oil

What to Do

  1. The first step here is to prep the marinade, so make sure all of your green onions, habaneros, and ginger are finely chopped up and placed into a bowl. Add your olive oil, soy sauce, and lime juice. Stir in 2-3 tablespoons of our Appalachian Jerk seasoning until uniform. You can use a blender for this marinade if you’d like, but we don’t.

  2. Put your chicken thighs (or drums) into an airtight container and pour your jerk marinade over top. Seal the container and marinate in your fridge for a minimum of 2 hours up to 24 hours.

  3. Once fully marinated, remove from the container and season lightly with your remaining Appalachian Jerk seasoning.

  4. Bake at 375F for 45 minutes or until the internal temperature 165F. When the chicken is done, finish it by broiling on high for 2-5 minutes or until the chicken skin is browned and crispy.

    • As an alternative you can also grill the chicken which typically takes 20-30 minutes at 400F
