Red River Sweet Potatoes

 

What You’ll Need

  • 3-4 sweet potatoes

  • 1 TBSP of olive oil

  • 1 TBSP of Red River Rub

What to Do

  1. Dice your sweet potatoes into 1 inch cubes. You can peel them first if you want to but I generally leave the skin on to get a little extra crispiness.

  2. Add your sweet potatoes into a large mixing bowl with your olive oil and Red River Rub. Mix until all the cubes are evenly coated. You can also add more Red River Rub for a stronger flavor if you’d like.

  3. Preheat your oven to 400F. Arrange all of your sweet potato cubes onto a foil lined baking sheet making sure there isn’t a whole lot of overlap.

  4. Place the baking sheet into the oven and cook at 400F for 25-30 minutes depending on how crispy you want them. Flip the potato cubes over halfway through the cook time.

  5. Serve this as a side or a delicious vegan snack!
